I wouldn't go along with "by default". The To: header is not
particularly useful because I may be addressed in the Cc: header or
even in a Bcc: which would show up as an Envelope-to:

I can post from a number of different addresses depending on which
organisation the message concerns. Nevertheless I don't need to know
which in the search window.

I think I asked for this a long time ago. When searching outgoing
folders it makes sense to display the recipient and not the sender.
The problem there is what do you do when searching a mix of incoming
and outgoing mail folders. It's unlikely that you'd want to do this
except when doing a blanket search of everything. I'd accept
inheriting the columns from the first mailbox or folder searched or,
and this could be a bit more difficult, inherit all the columns from
all the folders being searched.
